It's probably one of the worst story-wise, but I love Portrait of Ruin. So many characters, hard mode(s), and a lot to challenge yourself with. Maria/Richter is the most fun thing ever.
Also, I've been playing a little Rondo of Blood lately and been hating it. It's so unforgiving and gives you so little control that I can't seem to enjoy it. And the hidden paths are *really* hidden. I haven't played any other classic Castlevania in forever though. I used to play Super Castlevania IV back when I was 8, but I think I like the Castle-roid's best, if only for the freedom of movement, RPG elements, and lack of insta-death holes.
Disclaimer: I don't have anything against insta-death holes specifically. I love and have no complaints about the classic MegaMans, for example, but I find myself being stun-locked down them far more often in the old Castlevania's far more often. Maybe it's because Mega Man has a lot more weapons at his disposal, but I think it's more of a control issue. Classic Castlevanias really want you to be married to you jumps.

symphony of the night is an undeniable classic, probably the best. but i really loved one of the 3d ps2 ones... the one with pumpkin. it was the first 3d castlevania that wasn't completely terrible and clunky and as a bonus it had the best secret character of all time... next to tofu.
