So I was chatting with a friend lately on gaming tastes, and he made me realize I had a staggeringly low count of RPGs I've played.
I'd like to play a few excellent ones of your recommendation. Recommend away, guys.
Consoles: Nintendo DS, Xbox 360, Wii. (My brother's also got a PSP he doesn't use, but unless the game is seriously worth it, I think I'll just leave it to gather dust.)

Mass Effect has to be one of the best RPGs I've played in this gen of games. It's deep, unique, and the battle system is more than satisfying. Mass Effect 2 is coming out some time in January, so you'd be picking it up at just the right time. It takes forever to beat, and there's an asston of extra content, sidequests, general exploran, etc.
Oblivion's another big one. It was my first game on the 360, so basically, my first taste of the next generation of video games. In my eyes, Oblivion's a must-have for any 360 gamer seeing how it's only $19, which is a steal for what you're getting. Fallout 3 is pretty much follows the same take on open world RPGs as Oblivion, but in a completely different setting with a post-apocalyptic atmosphere that no other game has successfully produced. Fable 2 was decent I guess, but I wouldn't pick it up regardless of any nice things you might hear about it. It's fun to play through, but the story sucks hard and there's practically no content aside from what goes with the main story.

You should play Crisis Core: Final Fantasy for the PSP, it's a really great game. Also, Disgaea 1 and 2 also for the PSP, it's one of the better RPGs I've played so far.

The World Ends with You is also an awesome RPG. Try Kingdom Hearts 365/2 as well.

PSP? Get Tales of Eternia, great game. Disgaea 2 if you enjoy mindlessGRINDIIIIINZ and tactics RPGs. Dissidia is ok. My friends are addicted with it. I got bored after 2 weeks though, but I was sucked into Tales of Eternia, D2, and MHFU. Oh yeah, try Monster Hunter Freedom Unite.
I saw Yggdra Union at some stores, and questioned on whether I should get it or not, but it SEEMS good. Also PSP.
For 360, Vesperia is a MUST-GET. For Wii, I don't know too many games, bit you can always try playing Tales of Symphonia (GC game), though it doesn't top some of the other Tales I've played. I just have high expectations for Tales.. like, overly high....
