Am i still able to anvil types (ie hat, glove) to ones of different classes?
Also Anvil swaps appearances, not just puts one into the other image, right?

Yes, you may anvil different class equips over your own class equips.

The only limitation one needs to think about is that a 1-h sword can only cover a 1-h sword etc. No dagger instead of wand iow.

No, one equip takes the appearance of the other. You're left with two equips that look the same, rather than two equips who have swapped appearances.

No, only one of your items will change appearance. The other will stay exactly the same as before using the Anvil.
