Just a quick question, what are the differences between those two?

Torpedo is a mob attack, cannon is a 1:1 attack.

So this post doesn't get off topic, I'll go into specifics.
Cannon is 380% * 4 hits on one monster. Works like Strafe but without the little casting/finishing delay.
Torpedo is 780% on six monsters. Torpedo works like Iron Arrow and it goes through monsters damaging as it passes.
