People are getting well over 1k, but I'm barely getting over a hundred. Is there more to ice knight mode then just attacking the ice knight?

Nope...just make sure your attacks actually hit the IK.

also, find out what you can spam that gives a lot of points, for example my DB can't spam PB or FB, and when they hit they give 2 points, but it can spam BF and it gives 3 points per strike
