In my experience, trading one at a time only rewards balrog defense scrolls, so I don't recommend you trade once at a time. I'm guessing that 1 leather gives defense, 7 leathers gives hp/mp/speed/jump/acc/avoid, 20 leathers gives str/int/dex/luk, and 30 leathers gives twilight, but I haven't gotten enough leathers to test the higher numbers yet.
