Airplanes didn't increase count for me.
Also, My count was 6 when i used 3 mounts from gold fruit mounts (plus miwok hog, ds wings and dragon). After the 3 day mounts expired, I farmed a bunch of gold fruit, and got about 8 mounts. Using a coupon reset my count to 3, and also for some reason, the count for first medal stopped at 6. So now my counts for the other 2 medals are 12/30 and 12/50, but for some reason, count for first medal was 6/10. wtp?
I tried forfeiting and now it's not counting any of the mounts i have active, and my count is 0/10
