Cannot believe no one has recommended Law & Order SVU yet. By far one of the best shows on television for over a decade, and super easy to watch if you have a Netflix account since all but the most current season are watch instantly.

Game of Thrones I love the book series A Song of Ice and Fire and I was a bit apprehensive as to whether they can properly turn the first book into a good TV series. I was absolutely floored by how great the TV series adaptation is (they're filming the second season yay!). I'd recommend anyone who have watched the series (and liked it) to read the book, if you haven't done so already.
There's lots of adult themes in the series though as well as violence and a bit of gore so not recommended for the young and/or squeamish.

Firefly was cancelled, but it wasn't "unfinished". That is, there's no real cliffhanger or anything that doesn't get resolved, since there's not much of specific season-long story arc and most of the episodes can even be watched out of order. There's a movie (Serenity) that takes place after the end of the series, anyway. And a few comics have also been released since then, one of which tells the past of Book, if you absolutely need to know that.
