I know the basics from the rules posts on other mafia games but it's still my first time and the dynamics of the game are kinda confusing when you are not actually playing it.

Have you guys considered having a replacement list. Then again, mafia isn't that mainstream on this forum board. So there probably isn't need for one. But in certain games they scale it back to 14 or so players and over six spots for reserve in case other players can't make it. Anyway. For future reference.

Usually we don't need a replacement list because people are usually pretty good about sign ups and playing the game. If a person is inactive usually they get godkilled or the host tries to get someone to replace them via the thread or IRC.
